CHAMPAGNE VINCENTCOUCHE Champagne – Côte des Bar In the heart of the Côte des Bar, Vincent Couche, a winemaker who is passionate and rigorous in his craft, grows 13 hectares of vines across 2 terroirs using biodynamic methods: Buxeuil-10 hectares. The vineyards are planted primarily with Pinot Noir. On the advice of Claude Bourguignon, certain parcels have been planted with Chardonnay vines. The vineyards are mainly south and west facing on steep hillsides with the Seine lying below. This area enjoys its own specific microclimate with high temperatures and relatively good humidity thanks to the presence of the river just below the vines. The soil consists of clay-limestone and clayey marls, depending on the parcel, and the planting density is high (around 10,100 vines per hectare) in order to increase competition between the vine stocks and ensure the production of higher quality grapes with optimum ripeness and flavour. Vincent is very attentive to nature and carefully analyses the vines’ needs and strives to bring them energy and health using biodynamic methods. This includes decoctions of medicinal plants (valerian, horsetail, nettle, winter savoury, meadow sweet, oregano), horn manure, spraying with crystalline silica (quartz powder) and the addition of compost. The temperature-controlled vat house, vaulted cellars and oak barrels all contribute to the harmonious vinification of our wines. The wines are tasted regularly throughout the vinification process. The alcoholic fermentation takes place with indigenous yeasts which requires extra special care. The wines are vinified using a tiny amount of sulphur and sometimes no sulphur at all.
